- 2 tablespoons Planta margarine
- 2 sweet potatoes into 2 inch cubes
- 1 medium onion chopped
- 4 cloves garlic minced
- 200 grams crushed tomatoes
- 1 cup water
- salt
- 1/2 teaspoon black pepper
- 1 1/2 teaspoon curry powder
- 1 teaspoon paprika
- 2 sprigs fresh thyme
- 1/3 cup peanut butter
- 1/2 cup peanuts crushed
- 2 cups kale chopped
- coriander leaves
- Heat Planta margarine in a pot and add the onions and garlic and cook for 2 minutes.
- Add the sweet potatoes and stir until it gets a little bit of colour on it.
- Season with salt and pepper, curry powder, paprika and thyme and then add the tomatoes and water. Cover and let simmer for 15 - 20 minutes or until the sweet potato is soft and cooked through.
- Then add the peanuts, peanut butter and kale and cook for another 5 minutes.
- Top with coriander leaves and serve with steamed rice.
