  • 2 tablespoons Planta margarine
  • 2 sweet potatoes into 2 inch cubes
  • 1 medium onion chopped
  • 4 cloves garlic minced
  • 200 grams crushed tomatoes
  • 1 cup water
  • salt
  • 1/2 teaspoon black pepper
  • 1 1/2 teaspoon curry powder
  • 1 teaspoon paprika
  • 2 sprigs fresh thyme
  • 1/3 cup peanut butter
  • 1/2 cup peanuts crushed
  • 2 cups kale chopped
  • coriander leaves
  1. Heat Planta margarine in a pot and add the onions and garlic and cook for 2 minutes.
  2. Add the sweet potatoes and stir until it gets a little bit of colour on it.
  3. Season with salt and pepper, curry powder, paprika and thyme and then add the tomatoes and water. Cover and let simmer for 15 - 20 minutes or until the sweet potato is soft and cooked through.
  4. Then add the peanuts, peanut butter and kale and cook for another 5 minutes.
  5. Top with coriander leaves and serve with steamed rice.
