Try this simple savoury fusion of eggs & french fries dish today!

For the eggs
- 4 eggs
- 1 small onion chopped
- 1 medium tomato chopped
- 1 potato / cooked potato fries
- 1/2 bunch coriander leaves chopped
- 2 green chillies chopped
- 2 tablespoons Planta margarine
For the Kamchumbari
- 1 tomato sliced
- 1 onion sliced
- 1/2 bunch coriander leaves chopped
- 1/2 lemon juice
- Crack eggs in a bowl. Add the onions, tomatoes, coriander leaves, green chillies and salt and whisk with a fork.
- Heat Planta margarine and add the eggs. Stir and scramble until cooked half way.
- Place the potato fries on the eggs in an even layer and once firm, turn the pan over on a plate.
- Slide the eggs back into the pan and cook for 2 minutes.
- To make the Kachumbari: mix together the tomatoes, onion and coriander leaves and a squeeze of lemon juice.
- Serve the Chips Mayai with some Kachumbari.
