Try this simple savoury fusion of eggs & french fries dish today!

For the eggs
  • 4 eggs
  • 1 small onion chopped
  • 1 medium tomato chopped
  • 1 potato / cooked potato fries
  • 1/2 bunch coriander leaves chopped
  • 2 green chillies chopped
  • 2 tablespoons Planta margarine
For the Kamchumbari
  • 1 tomato sliced
  • 1 onion sliced
  • 1/2 bunch coriander leaves chopped
  • 1/2 lemon juice
  1. Crack eggs in a bowl. Add the onions, tomatoes, coriander leaves, green chillies and salt and whisk with a fork.
  2. Heat Planta margarine and add the eggs. Stir and scramble until cooked half way.
  3. Place the potato fries on the eggs in an even layer and once firm, turn the pan over on a plate.
  4. Slide the eggs back into the pan and cook for 2 minutes.
  5. To make the Kachumbari: mix together the tomatoes, onion and coriander leaves and a squeeze of lemon juice.
  6. Serve the Chips Mayai with some Kachumbari.
